the best way i found to make nachos is like this:
buy some good tortilla chips. from white corn. i like santitas. soak some great northern beans or pintos (mild tasting) the night before, and cook them in the morning. when your beans are cooked melt in queso asadero and queso oaxaca and stir some crema. pour mix on the chips which are now in a big bowl. then add your grilled/shredded meat of choice-- i think chicken goes well with this actually. pork would too. top with pico de gallo made with serrano chiles. -- i'm thinking right now, for black beans, i'd use chorizo for meat, and skip the crema, not sure about the pico. |

Don't worry, when it comes to nachos and other Americanized "Mexican" delicacies the British have no frame of reference so their opinion doesn't count. Maybe he can suggest a great eel pie recipe instead?
