wow this thread got pushed back and i couldn't find it
i don't have this ready to eat yet, but after 2 weeks of hanging (solstice slaughter), i got me 50lbs of mutton!
i'm trying to figure out how to cut mutton chops from a side of mutton-- luckily i got the backbone in my side.
doesn't look too simple!
also trying to figure out the neck, shoulder, leg, shanks, etc.
maybe i'll just use the chuang-tzu method and slide the knife wherever there's an opening. for that, i'll need more tea with bourbon. hA!
